Why do chefs wear those absurdly tall hats? Fascinating story behind chef’s toque

Why do chefs wear those towering white hats? Discover the fascinating history of the toque blanche, why its height once signalled kitchen rank, what the pleats mean and how the iconic chef’s uniform evolved.

New Delhi: Walk into a traditional restaurant kitchen and one item of clothing immediately commands attention: the impossibly tall white hat perched on the chef’s head. Known as the toque blanche, French for “white hat”, it has become one of the most recognisable symbols of professional cooking. But the towering headgear was not designed merely to make chefs look grand. Its story is rooted in hygiene, professional identity, kitchen hierarchy and the transformation of cooking into a disciplined profession.

The chef’s hat predates the modern toque

Head coverings were used by cooks long before the familiar tall white toque emerged. Historical accounts describe European cooks wearing bonnet-like headgear, while earlier forms of the toque itself existed as general brimless hats. In hot kitchens, head coverings had obvious practical uses: they helped keep hair away from food and could absorb perspiration while protecting the wearer from splashes.

The dramatic version of the chef’s hat, however, is closely associated with 19th-century French cuisine.
