One man had to under-go life-saving surgery for a bleed on the brain following the clash in the town centre on May 28 last year.
Four men are accused but only one, Milad Abdi, 26, of Orchard Close in Attleborough, appeared at Norwich Crown Court where he pleaded not guilty to affray.
He was told he will stand trial in April 2027.
Jalal, of Southfields Drive in Peterborough, is charged with affray, while Sharifi, of Crown Walk in Newmarket, is accused of GBH and affray.
The court was told a fourth defendant, Hogr Sardar, 34, of King Street, Thetford, also accused of affray, was currently in Kazakhstan but had been in contact with his legal team about plans to return to the UK.
