Baker expands team to launch one-of-a-kind sweet treat

Sophia Kirkpatrick, the owner of Norwich bakery Swirl, is rolling out a new sweet treat after expanding her team.

She opened Swirl as a pop-up at Grounded Coffee Bar in Unthank Road six months ago.

Now, she has nine members of staff and is looking to get a second delivery van as she prepares to launch a new item.

She said: "On some days, we deliver to 19 different locations across Norfolk and Suffolk.

"We have been busy working on a new product and Swirl will be the first bakery in Norwich to offer it.

"The concept will remain the same, they will be hand-baked, fresh, every day.

"I had a new baker start yesterday who will be specifically helping with the new item.

"I am getting a new van for events and the daily deliveries."

Ms Kirkpatrick's team includes a part-time and a full-time delivery driver, a full-time cleaner and a full-time baker.

She said: "It has been difficult finding staff members to work in the evenings.

"It is great to be able to give opportunities to young people.

“Although I now have a solid team, I have had staff members let me down.

"Almost every weekend, we attend farmers' markets and other events where we sell our cinnamon buns.

"We will be at Black Barn Farm this Saturday."

When the business launched in October, it quickly gained popularity, with customers queuing at her pop-up locations across Norwich.

Ms Kirkpatrick's bakes are stocked at locations across the city, including OP's coffee shop in Bank Plain and Billy's Coffee House in St Gregory's Alley.

Her vegan cinnamon buns can be purchased from Finnie's Juice Bar in Lower Goat Lane.
