Coffee shops exist outside the confines of home and work - a separate, "third space," as Starbucks' creator Howard Schultz initially envisioned them. They're supposed to be warm and inviting.
So that might help explain why the latest trend is the total opposite: cool-toned and sleek.
"People, more than they realize, are looking for simplicity, calm and a safe space," says Sarah Hassler, co-founder of Blue Mind Coffee, in Indianapolis, Indiana. "There's something about that that is really inviting, because our worlds can be hectic, and homes cluttered because we're busy. Going in there, a lot of people say, 'I feel peaceful when I'm in there,' so when shops have cleaner, minimalist looks, people are drawn to them because it puts them at ease."
