She had to buy a temporary coffee machine and get a last-minute food delivery after her chef told her they could not start until April 27.
But Ms Byrne, determined to open the cafe at her clinic in Sandy Lane, Old Lakenham has committed to waking up at 4 am every day this week to prepare the food for customers.
She said: "It's going to be a really busy week for me.

"I wanted to get the cafe open as soon as possible despite my chef not being available this week.
"I got in contact with one of my friends who owns Fresh Bake Bakery on North Walsham Road and they put me together a package of food.
"Zoe, one of my staff members, took over running the coffee bar for me yesterday, during the launch, so I could carry on with my beauty treatments for the day.
"The launch went really well.
"I will be opening with a limited menu this week and we will be in full swing next week."

The cafe area, which her three sons helped to renovate, will be open to both customers and members of the public.
She said: "I have some really good people who have stepped in when I have needed help.
"My three sons have been amazing and it has been a real team effort.

“The cakes will be made from a local baker called Chloe, who is trying to set up a small business.
"We’ve got room to expand it if people like the idea.
"I am nervous and excited about how it will progress."
