Texas A&M University in College Station is steeped in tradition. From Midnight Yell to Fish Camp, some things will never change.

Tradition, of course, is the foundation of another Texas institution: barbecue.

So, it seems natural that College Station would be a destination for great Texas barbecue. Well, not so fast. Certainly, Martin’s Place in nearby Bryan is one of the oldest and most traditional joints in the state.

But when it comes to contemporary craft barbecue, College Station initially lacked a famous name like Snow’s BBQ or Franklin Barbecue. That is until 2017........
