I can guess what you might have been thinking while reading through The Herald’s list of the top 50 most exciting chefs in Scotland, because I was beginning to feel the same way while curating it.
Edinburgh, Glasgow, Edinburgh, Glasgow: that's an awful lot of space taken up by people based in the central belt.
The honest truth is there is not a single name on that list who has not rightfully earned their spot, and bumping them off for the sake of geographical spread would be a disservice to their achievements.
However, even when outnumbered, there is no question that some of the most notable entries in the final feature come from outside Scotland’s largest cities.
