Researchers from the Quadram Institute and John Innes Centre want to study whether the soup, containing biofortified tomatoes grown in Norwich, can boost levels of vitamin D - nicknamed the sunshine vitamin.
They need 76 participants with low vitamin D levels, aged over 18 and living within 40 miles of Norwich to eat a portion of tomato soup daily for three weeks.
The ViTaL-D study will explore whether consuming the soup leads to higher levels of vitamin D in the blood after people have eaten it.
If successful, it would be a step towards using the biofortified gene-edited tomatoes, which were developed at the John........
